“You never know where your journey will take you,” says Peter Jarvis, when asked about how he got to be a fishmonger. Spending summers on Cape Cod, working as a ski instructor in Vermont, and then a bartender at the Bull and Finch Pub of Cheers fame, Peter and his wife Suzanne made their way to Florida over 30 years ago.
Then, Peter opened Triar Seafood, a boutique wholesale company providing fresh fish and stone crabs via overnight delivery to chefs around the nation. Working with local day boat fisherman, Peter’s team hand selects only responsibly harvested seafood, filets and packages it for overnight shipping within a few hours of arriving dockside, so you know it is fresh.
Peter serves on the Board of the Southeastern Fisheries Association, to support responsible harvesting by the commercial fishing industry while maintaining sustainable stocks of fish.
